In this study, the application of palm empty bunches of liquid smoke will be utilized in fresh fruit bunches to the quality of CPO (Crude Palm Oil). In this study used samples of fresh fruit bunches fraction 2. With a sample of one bunch of fresh fruit (FFB) intact which is divided into 5 parts using injectable, spray and combination treatment methods. Each treatment method uses liquid smoke at a dose of 80% with a 24-hour period of safeness. To see a comparison of the results of the sample treatment method used sample control time 0 hours without liquid smoke and 24-hour acidification sample without liquid smoke. The results showed that grade 2 empty palm liquid smoke is able to lower the content of free fatty acids in crude palm oil.The best free fatty acid content results are found in the sample of combination treatment method 1.25% and injectable 1.55% because the results obtained greatly decreased and has met the Indonesian National Standard 01-2901-2006. For the lowest moisture content of 0.91% and the resulting impurities are still very high 0.31% .because to get crude palm oil by pressing using manual tools with cloth so that the results obtained have not met the Indonesian National Standard 01-2901-2006
